Driftwood is an intensely rich and creamy ash-coated goat’s cheese. The texture of the cheese goes from mousse-like when young and then develops a gooey outer paste below the rind. The flavour starts out light and delicate, but a fuller flavour packed with citrus and pepper and earth from the ash rind. It is a sensational example of goat cheese and perfectly pairs with wine.
