Produced by Jonny Crickmore in Suffolk, Baron Bigod is a brie-style cheese made from the milk of Montbeliarde cows. Jonny’s family has been farming for three generations, and his venture into cheese-making marked a significant shift. To produce top-quality cheese, Jonny sourced Montbeliarde cows from France, known for their high-protein milk essential for famous French cheeses like Comté. This breed was crossbred with the family’s Friesians, enhancing the herd’s quality.
