Taleggio is a washed-rind cheese with a rosy coloured and sometimes mould-mottled rind with a pungent aroma. This encases a relatively mild and silky paste, which may break down at the edges but remains crumbly and fresh-tasting in the centre with a distinctive fruity tang.
