Tunworth cheese, crafted by Stacey Hedges of Hampshire Cheese Co was inspired by her visits to traditional Camembert producers in Normandy, Stacey embarked on a journey to create this remarkable cheese. Using locally sourced milk and employing a highly challenging and traditional recipe, Tunworth stands as a testament to her dedication and skill.
Stacey’s meticulous cheese-making process involves a slow overnight acidification, followed by delicate hand-ladling of the curds into moulds. This approach, not commonly used by many Camembert makers due to its complexity, results in a cheese of unparalleled quality and flavour.
The fruitiness and tang of Tunworth are so profound that they could convince even a Frenchman that it was made on his terroir. This achievement did not go unnoticed, as Tunworth claimed the prestigious title of Supreme Champion at the British Cheese Awards in 2006 and 2013. This cheese is absolutely delicious baked!
