Secret de Château Biac is a complex sweet wine steeped in tradition, craftsmanship, and joy. Nectar-gold in appearance, it has notes of cinnamon, peach and flowers on the nose. Pour yourself a glass and you will find a sweet wine that is textured, layered, and sweet as a summer’s day.
History and Winemaking
Château Biac has over 300 years of rich history, producing outstanding wines. The vineyard and winery have been owned by the Asseily family for the last 20 of those years and in that time they have produced wines known for precision and attention to detail.
The Secret de Château Biac is perhaps the prime example of this care. This sweet wine is produced by handpicking grapes one at a time. They are looking for the presence of the Noble Rot Botrytis Cinerea. This Noble Rot pierces the skins of the Sémillon grapes on a microscopic level, allowing the water trapped inside to escape steadily. The grapes shrivel while the flavours inside concentrate, creating a unique chemical profile for the wine. High levels of sugar, glycerol, and various acids all contribute to a wine that takes longer to ferment but takes on a richness of flavour that is equal parts unique and thrilling.
Tasting Notes
- Colour: The colour is the first thing you will notice with this wine. Deep, warm and bright; it looks almost like liquid gold.
- Nose: Dried apricots, cinnamon sticks, peaches and white flowers.
- Palate: Rich and complex, this wine has plenty of texture and acidity without compromising on freshness.
Pairings
One pairing that we cannot get enough of a chilled glass of this Secret de Château Biac paired with a generous slice of our Roquefort cheese. The sweetness of the wine alongside the sharp creaminess of the cheese is a great crowd pleaser!
It also pairs wonderfully with lemon desserts, for which we would recommend some Amalfi Lemon Marmalade. If you can’t wait until dessert to crack the bottle open, however, it will also nicely complement a whole range of seafood, especially lobster.
