Made exclusively from the finest Chardonnay grapes grown in Black Chalk’s Upper Levels vineyard, Paragon is an elegant and deeply complex English sparkling wine.
Half of the wine is fermented in stainless steel, while the remaining half is fermented in oak foudres, creating the perfect balance of freshness, texture and complexity. A minimum of 32 months spent ageing on the lees gives Paragon its rich, sumptuous mouthfeel, while minimal intervention allows the purity of the Chardonnay to shine.
Concentrated yet beautifully fresh, expect crystalline citrus alongside notes of apple, pear and peach, complemented by a subtle salinity. Precise, rounded and wonderfully expressive, with a long, lingering finish.
