Description
Membrillo is a traditional quince paste made by slowly cooking quince fruit with sugar and lemon juice until it develops a firm, sliceable texture and a deep amber-red colour.
The Santa Teresa version is made from hand-selected fresh quinces using a traditional recipe, with only three ingredients: quince, sugar, and lemon juice, no additives or preservatives. It has a sweet, fruity flavour balanced by gentle acidity and a dense, smooth texture.
Pairings
Santa Teresa Membrillo pairs beautifully with cheese, especially Manchego, mature cheddar, Pecorino, and other sheep’s milk cheeses, while blue cheeses provide a delicious sweet-and-salty contrast. It is equally versatile served with crackers, crusty bread, cured meats such as jamón, roast pork, or simply spread on toast. It can also be diced into salads with nuts or used in pastries and desserts. For drinks, try pairing it with dry Spanish whites such as Albariño, medium-bodied reds like Rioja, or a sweet Pedro Ximénez sherry when serving as part of a dessert course.
