Rachel is made at White Lake Dairy in Somerset, England. This part of the country is known for great dairy. Its mild weather and lush fields create perfect conditions for raising goats. These goats produce rich, high-quality milk. The dairy uses traditional methods to turn this milk into cheese. They also focus on sustainability, making each wheel with care for the land. Because of this, Rachel reflects both local tradition and natural flavour.

Tasting

Rachel is a semi-firm goat’s cheese with a bold, washed rind. This rind gives it a striking look and a deeper taste. The cheese is made using a method like that of Gouda or Comté. As it matures, the flavour becomes rich and layered. At first bite, the texture is smooth and creamy. Then, you notice light nutty flavours that feel soft and mellow. A gentle citrus note follows, adding a clean, bright edge. As the cheese ages, it grows stronger but stays well balanced. Each bite offers a mix of richness, sharpness, and creamy depth.

Pairing

Rachel pairs well with many foods and drinks. First, try it with sparkling wine or chilled Rosé. The bubbles and fresh fruit notes match the cheese’s smooth tang.
