A village co-operative in Val Taleggio, Lombardy, crafts this cheese with care and tradition. Farmers raise cows on lush mountain pastures, feeding them fresh grass and herbs. These natural conditions give the milk its rich, full flavour. Then, skilled cheesemakers turn it into Taleggio using time-honoured methods. As a result, every wheel reflects the valley’s landscape and culture. Together, the co-operative and farmers preserve a legacy of quality and craftsmanship.

Tasting

Taleggio is known for its striking rosy rind, which may show patches of mould as it ages. Beneath the rind lies a smooth, creamy paste that offers a rich, fruity taste with a silky texture. As the cheese ripens, the outer edges may soften further, becoming slightly oozy and marshmallow-like. Despite its bold aroma—meaty, earthy, and robust—the flavour remains surprisingly gentle and mild. Notes of tangy fruit, fresh cream, and a hint of yeast create a delicate, well-rounded experience.

Pairing

Taleggio pairs beautifully with a wide range of foods and drinks. Start with rustic, crusty bread or a slice of walnut loaf. It also complements thinly sliced charcuterie, fresh figs, and roasted vegetables. For drinks, try it with a fruity red like Barbera or a dry white like Verdicchio.
