Description
Sauternes is a sweet wine that glows with a golden hue. It offers aromas of blossoms, white peach, and honey. The taste strikes a perfect balance between sweetness and acidity. Flavors of citrus, apricot, and caramel linger on your tongue, finishing with a smooth aftertaste. Hints of beeswax, honey, and barley sugar add depth and complexity. The richness is nicely balanced by a crisp acidity that enhances its smoothness.
History and Winemaking
Casa Vinicola Botter, founded in 1928, produces Sauternes in Bordeaux’s Sauternais region. The winery uses sustainable practices, avoids chemicals, and relies on renewable energy. Sauternes mainly comes from Sémillon grapes, blended with Sauvignon Blanc and Muscadelle. The grapes undergo noble rot (botrytis), which shrivels them, concentrating their sugars and flavors. The team handpicks only the ripest, rot-affected grapes, ensuring the wine’s intense sweetness.
Tasting Notes
Sauternes presents a golden hue and aromas of white blossoms, peach, and honey. The wine is rich yet balanced, with sweetness countered by fresh acidity. Flavors of citrus, apricot, and caramel continue into a lasting finish. The wine’s bouquet also brings hints of beeswax, honey, and barley sugar. These elements come together for a beautifully harmonious taste.
Pairings
Sauternes pairs wonderfully with both cheese and dessert. Try it with Fourme D’Ambert cheese or fruity desserts like peach or apple tarts for an elevated experience. It also complements foie gras. Enjoy Sauternes on its own to appreciate its complexity, or pair it with a rich dish to bring out its full flavors.
