The Wijngaard family, producers of this exceptional cheese, have been making artisan Dutch cheeses for over a century. They use traditional techniques and age the cheeses in a 100-year-old warehouse, where natural airflow and changing seasons shape the final product. The unique maturing process takes place without modern climate control. As a result, each wheel develops a depth of flavour that reflects both time and place. This ageing method sets Reypenaer apart from standard goudas, giving the cheese its signature taste and texture.
