Tasting

Driftwood is a soft, ash-coated goat’s cheese with a striking appearance and bold character. When young, the cheese has a light and delicate flavour. It tastes fresh, clean, and slightly tangy. As it matures, the flavour deepens. Bright citrus notes appear first, followed by gentle spice and a hint of black pepper. The ash rind adds earthy complexity and a touch of bitterness that balances the creaminess inside. The texture also changes over time. At first, it is mousse-like and fluffy. Then, a gooey layer forms just beneath the rind, offering a rich, creamy mouthfeel. The centre stays firm and smooth, creating contrast in every slice.
