Location
Cornish Kern is made by Lynher Dairies, located in the green hills of Cornwall, England. This area is known for its strong dairy heritage and clean coastal air. The creamery has been making cheese since the 1980s. Over the years, it has grown into one of the UK’s most respected artisan cheesemakers. In 2024, Lynher Dairies received the King’s Award for Enterprise in Sustainable Development. This major honour highlights their focus on sustainability, traditional techniques, and strong local partnerships. Every wheel of Cornish Kern reflects their values, as well as the rich farmland and fresh milk of the region.
Tasting
Cornish Kern has been derived from a Gouda-style cheese, enhanced with Alpine starter cultures. The curds are scalded to create a caramelised flavour, after which it is pressed into large moulds. After brining and coating in wax, the cheese is matured for over 20 months. It has a deliciously nutty, deep, round flavour.
Pairing
This cheese is creamy and nutty with caramelised flavours, so it would pair beautifully with fruit jams or fresh fruits, such as grapes or figs. This would pair well with sparkling wines, including Champagne, Cava, and Prosecco, as the crisp bubbles balance the creaminess of the cheese. Fortified wines, such as Sherry and Port, make for bold pairings. Or consider Italian Soave or French Picpoul which would beautifully balance and accentuate this Cornish Kern.
