Brie de Meaux originates from the town of Meaux in the Île-de-France region of France.

Tasting

A must-have on any cheeseboard, this is Brie as it should be, a world apart from the supermarket kind. Brie de Meaux is an award-winning artisanal masterpiece made by the Dongé family, showcasing the pinnacle of French cheesemaking. Each bite is rich, creamy, and perfectly balanced, with salty, earthy, mushroomy and buttery notes that make it truly exceptional.

Pairing

Brie de Meaux pairs beautifully with a range of accompaniments, think crusty French bread, fresh fruit like grapes or strawberries, or a drizzle of truffle honey. When it comes to wine, Brie is wonderfully versatile depending on its maturity. In its younger, milder stage, opt for lighter, fruitier wines with high acidity to cut through the rich, mouth-coating texture. As the cheese matures and its flavours intensify, you can go bolder with your wine choices to match its depth. You can never go wrong with sparkling wine – especially those made in the traditional method, such as Crémant, Cava, or Champagne as their complex toasty, buttery notes from lees ageing perfectly complement the richness of the cheese.

Recipe

Baked Brie de Meaux with Honey, Thyme & Walnuts

Ingredients:

1 small wheel (or wedge) of Brie de Meaux

2 tbsp honey (truffle honey if you’re feeling fancy)

A few sprigs of fresh thyme or rosemary

A small handful of walnuts (or pecans), roughly chopped

Crusty baguette or crackers, to serve

Instructions:

Preheat the oven to 180°C (160°C fan) / 350°F / Gas mark 4.

Place the Brie in a small ovenproof dish or on a parchment-lined baking tray. If you’re using a wheel, score a cross on the top to help it open up and melt beautifully.

Drizzle with honey, scatter the walnuts over the top, and tuck in a few sprigs of thyme.

Bake for 10–15 minutes, or until the cheese is soft and gooey in the middle but not completely collapsing.

Serve immediately with slices of fresh baguette, crackers, or even apple slices.
