Earthy, creamy, buttery, luxurious cheese. Pairs well with oaked Chardonnay

Product Details

Location

Produced by Jonny Crickmore in Suffolk, Baron Bigod is a brie-style cheese. Jonny’s family has been farming for three generations. He wanted to make top-quality cheese. He sourced Montbeliarde cows from France. These cows are known for high-protein milk, perfect for cheeses like Comté. To improve the herd, Jonny crossed them with his family’s Friesians.

Tasting

Baron Bigod offers a rich, earthy flavor that lingers on the palate. The wrinkled, creamy exterior gives way to a soft, buttery texture beneath. As you cut into the cheese, you’ll notice the delicate curd at the core. The combination of smoothness and depth of flavor makes every bite a treat. The balance between creamy and earthy tones is what makes Baron Bigod stand out. It’s a cheese that evolves as you eat it, becoming richer and more complex with each bite. The texture is velvety, making it easy to spread on crackers or bread. With its rich flavor and smooth texture, it’s a cheese you can savor slowly.

Pairing

Baron Bigod pairs wonderfully with crusty baguette slices or artisanal crackers, providing a satisfying textural contrast. Its creamy and earthy notes also complement fruit preserves, honey, and nuts, adding sweetness and crunch. For drinks, a crisp white wine, sparkling wine, or a light-bodied red complements the cheese’s richness. These pairings create a harmonious experience, bringing out the best of the cheese’s flavors and textures.

Recipe

Baron Bigod’s creamy and buttery texture makes it an excellent addition to many recipes. Use it as a decadent topping for a gourmet pizza or melt it over roasted vegetables for a rich, savoury dish. It also works beautifully in a baked cheese tart or as a luxurious addition to a cheese board.
