Colston Bassett Stilton is handmade in the Vale of Belvoir, Nottinghamshire, by one of England’s most respected dairies. Since 1913, the Colston Bassett Dairy has worked closely with local farmers to produce high-quality, small-batch cheese. Cows graze on rich pastureland, producing fresh milk full of character. Skilled cheesemakers craft each wheel using traditional methods passed down over generations. As a result, the cheese reflects both the land and the people behind it, preserving a proud British cheesemaking heritage.

Tasting

This Stilton stands out for its dense, creamy texture and balanced blue veining. The paste is rich and buttery, marbled with delicate blue mould that brings savoury depth. At first bite, you’ll notice sweet, milky flavours followed by a gentle tang from the blue. As it matures, the flavour deepens without turning overly sharp. It finishes with a mellow, earthy richness and a hint of salt. Thanks to its smooth body and subtle bite, Colston Bassett offers elegance and complexity in every bite.

Stilton and Walnut Tartlets
Ingredients:

  • 200g Colston Bassett Stilton, crumbled
  • 1 sheet puff pastry
  • 100g walnuts, roughly chopped
  • 1 tbsp honey
  • 1 egg, beaten

Instructions:

  1. Preheat oven to 180°C (160°C fan). Line a baking tray with parchment paper.
  2. Cut puff pastry into 6 squares and place on the tray.
  3. Score a border around each square and prick the center with a fork.
  4. Scatter crumbled Stilton and chopped walnuts within the border of each tartlet.
  5. Drizzle with honey and brush the pastry edges with beaten egg.
  6. Bake for 12-15 minutes until golden and puffed. Serve warm.
