About Fine Cider

Typically made in colder climates, the apples are either harvested late in the season and left to freeze naturally on the tree or picked and then artificially frozen. This process, known as cryoconcentration, involves pressing the frozen apples to extract a rich, sugary juice, which is then fermented slowly over several months. The result is ice cider, characterised by its intense sweetness and complex flavour profile. It often exhibits a rich, concentrated apple flavour with notes of caramel, honey, and spices, and a balanced acidity that cuts through the sweetness, making it both refreshing and indulgent.
