Stinking Bishop is produced by Charles Martell & Son at Hunts Court Farm in Gloucestershire, England. Made in small batches from locally sourced milk, the cheese reflects the rich pastoral landscape of the Severn Vale and the region’s artisanal cheesemaking heritage.

Tasting

Despite its famously pungent aroma, Stinking Bishop offers a remarkably mild, creamy, and savoury flavour. Its supple, soft paste delivers lactic sweetness with subtle earthy and fruity notes. The rind is washed in perry made from Stinking Bishop pears, which gives the cheese its distinctive aroma and encourages a sticky, pink-orange rind.

Pairing
