At Mouse & Grape, we absolutely love Heckfield. It’s a semi-hard Guernsey cow’s milk cheese made with vegetarian rennet and matured for 12 months. The milk comes from Heckfield Park Farm, our brilliant local dairy just a couple of miles down the road, and you can really taste that quality. Its naturally golden colour comes from the high carotene in Guernsey milk, giving it a beautiful, eye-catching glow on any cheeseboard.
Tasting
Heckfield has this gorgeous “hard butter” texture that melts instantly on the palate. Don’t let that gentle feel fool you though—the flavour is wonderfully bold. Expect rich umami notes, a rounded savouriness, and that classic mature-cheddar-style tang that keeps you going back for another bite. Every now and then, you might even get a tiny tyrosine crunch… a sign of careful ageing and a cheese with real character.
Pairing
A little unusual for cheese, but we recommend serving Heckfield straight from the fridge to preserve that beautiful texture we adore.
We love it with pickled onions, ploughman’s chutney, and thick slices of fresh crusty bread. For wine, pair it with a crisp English white, a fuller Chardonnay, or a juicy light red like Gamay—each brings out its savoury depth in a different way.
Recipe
Heckfield is one of our favourite “upgrade anything” cheeses. Melt a slice over a burger for instant indulgence or swap it in for cheddar when making Welsh rarebit—it’s next-level. It also works beautifully grated into scones, layered into toasties, or stirred through comforting dishes that need a hit of savoury richness.
