Hafod Cheddar is handcrafted at Bwlchwernen Fawr, the longest-standing organic dairy farm in Wales, located in Ceredigion. Produced by the Holden family, the cheese reflects the farm’s lush pastures, traditional farming methods, and dedication to sustainable, small-scale cheesemaking.

Hafod Cheddar is known for its rich, buttery texture and deep, rounded flavour. It offers notes of grass, warm hay, and cultured butter, with a gentle acidity and occasional nuttiness. Clothbound and traditionally matured, it develops a complex, long-lasting finish that balances savoury depth with a mellow, creamy sweetness.
