Location
Switzerland, Emmental region in Canton, made by the Swiss cheesemaker Jumi in the village of Boll of Bern.
Tasting
A rich and indulgent washed-rind cheese made from raw cow’s milk in Switzerland’s Emmental region. It features a soft, rosy-orange rind with earthy, savoury aromas that contrast beautifully with the creamy, buttery interior. The flavour is mild yet complex, with notes of sweet cream, toasted nuts, and a gentle tang, developing subtle meaty and mushroomy characteristics as it ripens. The texture is supple, silky, and decadently gooey at room temperature.
Pairing
Pair C’est Bon with a drizzle of wildflower honey or a spoonful of fig chutney to complement its creamy texture and enhance its subtle nutty and savoury notes. This cheese is best enjoyed slightly warmed to room temperature, this allows the cheese to become soft, luscious, and beautifully oozy beneath the washed rind.
C’est Bon pairs wonderfully with aromatic white wines such as Gewürztraminer or Riesling, whose fruit and floral characteristics balance the cheese’s earthy complexity. For sparkling options, a dry Crémant or Champagne provides freshness and acidity that cut through the rich, creamy texture. If you prefer beer, a Belgian-style saison or a crisp lager complements the washed-rind character without overpowering its delicate sweetness.
