History and Winemaking
Vallformosa, a family-owned winery with over 150 years of history, is recognised as one of the top producers of Cava in Spain. Based in the Penedès Denomination of Origin, the winery benefits from a diverse range of microclimates influenced by both altitude and proximity to the Mediterranean coast. This unique environment contributes to the freshness and balance found in their wines.
Blue Fin Cava is the result of a creative collaboration between Vallformosa and leading chefs and sommeliers from Barcelona and Paris. It pays tribute to the traditions of sustainable bluefin tuna fishing in the Bay of Cádiz, celebrating the connection between gastronomy and local heritage.
The wine is made from a traditional blend of Macabeu, Xarel·lo, and Parellada grapes. Harvesting is carried out using a combination of manual and mechanical methods, followed by gentle pressing and a 24-hour settling period at low temperatures. After fermentation, the wine undergoes 18 months of ageing, developing its complexity, fine bubbles, and signature creamy texture.
Tasting Notes
Pale yellow with greenish hues. Aromas of crisp apple, pear, and citrus are complemented by subtle anise notes. The palate is smooth and creamy with delicate bubbles, revealing hints of pastry and nuts, and finishing long, fresh, and balanced.
