Product Details

Location

Crafted by the team at King Stone Dairy in the Cotswolds, England, Ashcombe draws inspiration from traditional French mountain cheeses. Its signature wood-ash line and beautifully developed rind reflect the skill and care poured into each wheel.

Tasting

Ashcombe is devilishly—and deceptively—moreish. The first bite is gentle, almost understated, before giving way to a richer depth of flavour. Notes of white meat and lactic freshness emerge, followed by a subtle, hazelnut-skin bitterness that adds complexity without overwhelming. Its pliant, chewy texture aerates as you eat, helping unlock those layered aromas and flavours with every mouthful.

Pairing

This supple, washed-rind cheese pairs wonderfully with alpine whites, light chillable reds, or farmhouse ciders that complement its savoury, nutty character. It shines on a cheeseboard alongside charcuterie and pickles, and also melts beautifully into warm dishes.

Recipe

Try folding Ashcombe into a tart with caramelised onions and thyme, or melt it over roasted new potatoes for an indulgent alpine-style side. Its smooth melt and subtle complexity elevate comforting, rustic recipes.
