Originating from the Alpine regions of Austria and southern Germany, Alp Blossom is crafted by cheesemaker Albert Kraus at Hofkäserei Kraus in the Allgäu Alps. Made from high-quality cow’s milk and aged for several months, each wheel is hand-coated with a vibrant blend of dried alpine flowers and mountain herbs, celebrating the rich biodiversity of the surrounding meadows.
Tasting
A striking semi-hard alpine cheese made from cow’s milk, Alp Blossom combines traditional mountain cheesemaking with a unique floral affinage. Beneath its colourful rind of cornflowers, marigolds, rose petals, lavender, and herbs lies a smooth, supple paste with a rich, buttery texture. The flavour is sweet and nutty, with notes of toasted hazelnuts, caramelised butter, and fresh cream, complemented by delicate floral and herbal aromas from the rind. As it matures, subtle savoury and umami characteristics emerge, creating a beautifully balanced and memorable cheese.
Pairing
Pair Alp Blossom with acacia honey, apricot preserves, or membrillo to highlight its gentle sweetness and nutty complexity.
For wine, aromatic whites such as Riesling, or a lightly oaked Chardonnay complement the cheese’s floral and creamy character. Sparkling wines, including Crémant or Champagne, provide refreshing acidity that balances the rich paste. Beer lovers will enjoy it with a crisp lager, or Belgian-style saison, whose freshness enhances the herbal rind without overpowering the cheese.
