Description
The Cabernet Sauvignon is a blend that shows both elegance and power. Its deep, vibrant colour hints at a wine with real depth. On the nose, you’ll find layered aromas of lead-pencil shavings, fresh red berries, and ripe blackcurrants. As the wine opens, these notes evolve into richer, darker tones. On the palate, it brings together bold dark fruit—like mulberries and blackcurrants—with subtle earthy hints. Thanks to its silky tannins and well-balanced acidity, the wine finishes long and smooth. Altogether, it’s a polished, expressive red that suits many occasions.
History and Winemaking
Diemersdal Estate sits in the cool-climate Durbanville region and has grown vines since 1698. Today, the family continues that legacy, producing wines that speak clearly of their unique terroir. The Private Collection stands as one of their signature wines, reflecting their highest standards.
To craft this blend, the team selects Bordeaux varietals from top vineyard blocks. They harvest by hand and sort grapes with care before fermentation. After fermentation, they age the wine in French oak barrels, which adds structure and finesse. While rooted in tradition, the winemaking also includes modern touches that enhance precision and purity. As a result, the 2022 vintage delivers freshness and complexity in equal measure.
Tasting Notes
The Cabernet Sauvignon’s deep colour hints at its intensity. Aromas of lead-pencil shavings, fresh red berries, and blackcurrants exude sophistication and restraint. On the palate, the wine is layered with flavours of dark fruit, including mulberries and blackcurrants, complemented by subtle earthy notes. A backbone of smooth tannins and balanced acidity ensures a polished and enjoyable experience, culminating in a long, elegant finish.
Pairings
The Cabernet Sauvignon pairs beautifully with aged cheeses such as Comté, Gouda, or mature Cheddar. It also complements hearty dishes like slow-cooked lamb shanks, roasted duck, or wild mushroom risotto, enhancing the flavours with its rich yet nuanced profile.
